I figured out how to make sourdough waffles that are actually yummy!
Delicious. Fluffly. Crispy. Gooey and oh so filling.
Waffles for Two
- 1 Cup of sourdough starter
- 6 eggs (I use so many eggs to make it a protein complete meal)
- 1/2 tsp. Baking Soda
- 1/2 tsp. Baking Powder
Blend all the ingredients together. This will be hard to do by hand because of how thick and clumpy sourdough starter is, so use a mixer or blender. Then pour onto a waffle iron and cook according to instructions.
I also suggest whipping up cream and thawing frozen berries. For syrup I try to stretch real maple syrup by melting it with the butter beforehand. It hasn’t worked so far because I let it boil too much and it gets thick and caramelized (so much for stretching!), but it is still tasty!
THM Alterations:
You could make this a Trim Tealthy Mama E meal by using only egg whites (I think you would need 12 of them to get 1/3 of your daily value of protein), leaving out the whipped cream and swapping out the syrup for one made from erythritol. Oh! And you should also add the allotted E meal teaspoon of butter, cream or coconut oil.
